  3. Fresh fish do not stink; they smell fresh and like a nice sea breeze.

  4. The fish’s “skin” should be tight but elastic at the same time.

When you press your finger on the skin it should “spring back”.

 

  1. Fresh fish fillets must be moist and tight.

  2. Check the fillets for bruises. Dark red spots will usually indicate mishandling of the fish.
