The list you are gong to see now will show you what look in a fresh fish:
- “Look deep into my eyes”, if they are cloudy and not clear it means that the fish has been “fished” more than 5 days ago.
- Its interior gills must be intense red, if it’s pink or brownish it probably means that either it is not that fresh or that it was mishandled.
- Fresh fish do not stink; they smell fresh and like a nice sea breeze.
- The fish’s “skin” should be tight but elastic at the same time.
When you press your finger on the skin it should “spring back”.
- Fresh fish fillets must be moist and tight.
- Check the fillets for bruises. Dark red spots will usually indicate mishandling of the fish.
